Quintessential Cauliflower Juice


cauliflowerIt is a given that cauliflower will not produce a lot of juice. However, its numerous health benefits make it a mandatory addition to your diet. It is usually enjoyed as an addition to juices that are mostly made up of other fruits and vegetables.

The substance purine occurs naturally in cauliflower is broken down into uric acid in the body. Excessive consumption of the juice can lead to elevated uric acid levels in the body and may lead to problems like kidney stones or gout. So it is best to limit cauliflower juice to once or twice a week, where you are able to gain the benefits without the negative side effects.

Quintessential Cauliflower Juice

Ingredients:

  • 1 large cucumber
  • 4 cups chopped cauliflower
  • 2 large apples

Directions:

Wash and cut all ingredients so they are small enough to fit your juicer. Start juicing with cucumber, then add the apples and finish off with the cauliflower. The apples add a nice sweeting to a refreshing drink, but if you find it to be too sweet you can reduce the apple to just one.

Nutritional Information

One hundred grams of cauliflower contain absolutely no cholesterol, hardly any fats, and five grams of carbohydrates and almost two grams of protein. Additionally it supplies 80% of the daily requirement of vitamin C, 10% of vitamin B6, 8% potassium, 3% magnesium and 2% of iron and calcium and 1% sodium. It also supplies some very vital micronutrients like sulforaphane, indole-3-carbinol and Di-indolyl-methane.

Health Benefits of Cauliflower

The sulforaphane is a sulfur compound known for its ability to kill cancer stem cells and slowing tumor growth. Research indicates that combining cauliflower with curcumin, the active ingredient in turmeric can might prevent and treat prostate cancer. Sulforaphane also improves kidney and blood function. The Indoles have been shown to inhibit development of cancers like breast, liver, stomach, lung and colon in rats. Cauliflower also contains anti-inflammatory compounds that help to keep a check on inflammation related diseases. Choline, one of the B vitamins found in good quantity in cauliflower, is vital for cognitive functioning of the brain. Lastly, cauliflower detoxifies the body, and reduces oxidative stress.
