Enthusiasts of paleo and primal diets love this recipe:
- 3 or 4 tomatoes
- Bacon lardons
- 2 boiled eggs
- A tablespoon of mayonnaise
- A few anchovies
- A tablespoon of olive oil.
Combine the sliced tomatoes with peeled boiled eggs cut into squares in a large salad bowl.
Fry the bacon, let it cool and add to the salad.
Now add the mayonnaise, anchovies, and olive oil and mix everything together.
The tartness and sweetness of the tomatoes compliments the oils and anchovies. Also try adding other pungent flavors such as dill, fennel, garlic, ginger, hot peppers, sweet peppers, lemon zest, mint, basil, perilla, and cheese. Add as many of this extra ingredients as you like.
