Spicy Tomato Juice

I love juice containing tomato as it's such a great source of nutrients.

Ingredients

  • 3 ripe medium sized tomatoes.
  • 1 red pepper.
  • 1 small cucumber.
  • 1/2 lemon (peeled).
  • small handful of corriander and/or parsley.
  • Tabasco sauce to taste (optional).

Wash all of the ingredients well.

Juice the ingredients and then add a dash of Tabasco sauce to taste.  This is optional, but I love this tangy juice with a big splash. You can drink this juice at room temperature or cold, so add crushed ice if you like it cold.

Tomatoes are a great source of vitamins and minerals, but also an antioxidant called lycopene which has been shown to offer protection against cancer.   The peppers and tomatoes also contain lutein and zeaxanthin which are important for good eye health.

Corriander adds a nice fragrance to the juice.  I like to add parsley to a lot of my juices since it is a powerhouse of nutrients.
